New year's day meal-Asian noodle
Nana is back. Today's breakfast was a simple Asian noodle cooked with onions, mushrooms, mrs. dash spices and hamburger. I am using just two tablespoons olive oil, sautee diced onions, chopped mushrooms. Then break off the hamburger and fry it with the onions and mushrooms. Add 2 cups of water. Let it boil. Add Mrs. Dash, about 1 tablespoon and a pinch of salt. Lastly, add the Asian noodle and let the noodle cook. Simple and satifying.

I love spaghetti. Tonight's meal was spaghetti using ground beef. It was delicious. I garnished the dish with shredded parmesan cheese.

Ramadan day 13
Half month through the fasting month. I have been eating light and spent most of my time driving for 20 miles from home to the camp ground. The RV had a new water heater and need to be tested. Today's meal is a simple fried mee hoon. I added lots of lettuces that I grow in the garden. Fried Meehoon is one of my favorite meal.

Ramadan 2015 Day 24 - Break Fasting Party part 4
It was a nice break fasting dinner at a friend's house. I ate too much that I had to stop or else I would not be able to drive home. Everyone are happy and enjoyed the meal. We start the course with some appetizers followed with rice and all kind of side dishes. It was a potluck dinner where everyone brought their own dish and share it at the party.
One of my favorite appetizer is the spring rolls. The filling of this spring roll is a mixture of eggs and vegetables. Someone brought quesadilla. I am not sure what is the filling. It might be egg and cheese.
The hostess prepared the fried noddle. It was really tasty. My blood sugar probably went up to the roof after eating this meal. But it was really delicious.
More main dishes are served. There are biryani rice, pineapple and cucumber salad, fish, bergedil, rice stick noodles, etc.
We had watermelon and cocktail fruits for the drink.
One lady brought this delicious tiramisu. I really had a good time enjoying the food and the company.

Ramadan 2015 Day 16 - Break Fasting Party
Another day is spent at a friend's house for break fasting. There are so much food served. I had a great time tasting each of the food.
I brought these donuts for everyone to enjoy.
I just don't know where to start...we have pulut panggang, fish in curry gravy, fried fish with sambal, fried bee hoon(rice stick noodles), fruit salad(rojak), stir fry vegetables, fried noodles, more stir fry vegetables.
Above is the dessert table. There are curry puff, spring rolls, pulut panggang, fried tempe, onde onde, kuih ketayap, and fermented glutinous rice (tapai pulut).

Ramadan 2015 Day 8 - Fried Rice Noodle with Fish Ball
A simple dinner tonight. Fried rice noodle is my favorite Asian dish. My mother used to cook this meal for the family. I would be the one who ate this the most. I find this rice noodle also known as bee hoon as comforting. I don't feel guilty even after eating 3 plates!
I think the calories count probably lesser than the spaghetti. Don't quote me. I am not a nutritionist.
There are so many ways to add the ingredients to this Asian dish. But the basic ingredients are:
Blended chili, onion, and garlic
Dark soy sauce
salt and a pinch of sugar to taste
1 tablespoon of ketchup (tomato sauce)
2 cups of fish ball
1 head romaine lettuce
2 tablespoons of olive oil
1 packet rice vermicelli noodle. Soak in warm water.
Method:
In a big pan, heat olive oil on medium.
Fry blended chili, onion, garlic for 5 minutes.
Then add soy sauce, salt, sugar, ketchup, and fish ball
cook for another 5 minutes.
Add noodle. Mix well and cook for another 10 minutes or until noodle is cooked.
Lastly, add romaine lettuce. Stir and turn off the stove.

Fried Rice Stick Noodle
Today’s Saturday morning breakfast was not pancakes like usual but this one of my favorite Asian dishes called “Mee hoon goreng” aka fried glazed noodle. This food is very light and delicious to eat with some cucumbers, celery and steamed carrot. The recipe is very simple and easy to cook.
Firstly, soak the glazed rice stick noodle in hot water. You can buy this rice stick noodle from the Asian store or from Giant or WEIS market.
Heat about ½ cup of olive oil in a big pot or wok or pan, I am using a big pot.
Sautee some chopped onion, chopped celery, chopped carrot.
Add a pinch of salt, and a pinch of Italian seasoning.
Add a cup of minced beef. (You can use chicken or turkey as well).
Stir well until beef are cooked. Then add the tossed noodle.
Add 2 tablespoons of hot sauce.
Add 1 tablespoon of dark soy sauce.
Add ½ cup of water.
Mix them well on medium low heat.
Cook for about 10 minutes or until the noodles cooked.
Serve warm with some cucumber, celery or carrot to the side.

Ramadan 2013 Day 24 - Spaghetti
Every so often, I like to cook spaghetti. It was really easy to cook. I just need 9 minutes to boil the spaghetti. Firstly, I will cook the ground beef. Toss it and set aside. Then I will cook the noodle.
Cook the sauce with the meat. Lastly, add the cooked noodle.
Delicious! I garnish this meal with grated Parmesan cheese.

Ramadan 2013 Day 15 - Laksa Kue Teow
The weather is getting better today. The temperature was at 80 degree F. I feels like cooking some soup. Since I have bought a kue teow, I've decided to cook laksa kue teow. This laksa was easy to cook. I am using ready to cook laksa spices. All I have to do is to boil 4 cups of water. Once boiled, I added the kue teow. Cook for another one minute and turn the stove off.
I garnish the laksa with some of my home grown red onion and home grown cucumber. Delicious!

Ramadan 2013 Day 1 -Spaghetti and Garlic Bread
Yeay! It is time to fast again. The first day of Ramadan in my area was today, the 10th of July. Mr Big and I woke up around 4 am to have our super twilight early breakfast. I cooked chicken sausage for him and a bowl of oatmeal for myself. After breakfast, we went back to sleep until our alarm went off for us to get ready for work. Very exciting…I was not feeling weak or sleepy at work. The oatmeal and the dates worked. Breaking fast was at 8:38 pm today. I baked garlic bread and cooked spaghetti for our meal. I am having a big glass of sweet “rambutan” drink. It was very cooling. I should stock up on the fruits. Delicious!

Fried Kue Teow and Fish Egg
I was happy to find the Asian store is selling fish eggs. I have been wanting to buy and cook some fish eggs. I like them lightly pan fry, or cook in curry, or in spicy gravy. Today's dinner is a simple kue teow and fish egg cooked in hot and spicy blend with petai (stinky beans).
The kue teow was fried simply with some shallots, garlic, hot peppers, soy sauce, fish sauce and bean sprouts.
I am using ready to use the Indo spices for the fish egg. I sauteed some yellow onion, and then add 1 packet of the Indo spices. Then add the fish egg and the stinky beans. Let it cook for about 5 minutes. Cover and turn the stove off.

Shrimp Curry Noodle
Tonight's breaking fast was a simple meal put together with shrimp and curry flavor. I am using angel hair wheat spaghetti for the noodle.
Ingredients:
2 cups of medium size shrimp
2 tablespoons of curry powder
4 pieces hot peppers
1 medium size onion
1 medium size tomato
1 cup shredded carrot
5 pieces soy puff
10 pieces curry leaf
1 teaspoon salt
1 cup coconut milk
5 cups water
1 tablespoon olive oil
Method:
Dice onion and hot peppers.
In a big pot, heat olive oil.
Saute onion and peppers.
Add curry powder. Cook for 3 minutes.
Add water.
Let it boil.
Add carrots, shrimp, curry leaf and soy puff.
Add coconut milk and salt.
Cook for another 5 minutes. Cover.
Turn off the stove.
In a separate pot, cook spaghetti until soft.
In a small bowl, add some cooked spaghetti or any noodle you fancy. Pour the shrimp curry on the noodle.
Serve warm. Enjoy!

Spaghetti with Turkey Meatballs
Dinner tonight is a simple meal. That is Spaghetti with turkey meatballs. I bought ground turkey thinking to make stuffing for the bell peppers I bought yesterday. Unfortunately, I could not find the stuffing bread in my kitchen. So, I decided to cook spaghetti with the turkey meatballs instead for our dinner today.
Ingredients:
4 cups thin spaghetti. Boil in water until cooked. Drain and set aside.
2 cups ready to use spaghetti sauce. Heat on low for 5 minutes.
For the meatballs:
1 pound ground turkey
1 big yellow onion
1 cup chopped coriander leaves.
1/2 teaspoon salt
1/2 teaspoon ground black pepper
olive oil to fry
Garnish with grated cheese. I don't have Parmesan cheese, so I am using Irish cheese.
Method:
Dice onion.
Chop coriander leaves finely.
Mix onion, coriander, salt and ground black pepper with the turkey.
Make small bite size ball.
Heat olive oil.
Fry the meatballs until golden brown.
To assemble it, place spaghetti on the plate. Then add meatballs. Pour some of the spaghetti sauce and then garnish with the grated cheese.
Serve warm.

Seafood Dinner and Spaghetti Goreng
This is a seafood selection from the menu we had for dinner at one of the seafood restaurant. We had this special dinner after Amira's ice skating class.
This meal is served cold except for the mussell at the top. We asked for the lobster to be packed home. It will taste better when steamed.
The popular fish and chips meal. The green sauce is peas dip.
This is my spaghetti goreng asian style I cooked this morning. This recipe is very simple.
1 box angel hair spaghetti.
Boil until tender and then drain the water. Set aside.
In a skillet, heat sambal blend (red hot peppers, onion, garlic and lemon grass) in 1/2 cup olive oil on medium low.
Add 3 cups cherry tomatoes. Cover.
Once the cherry tomatoes broken down, add 2 tablespoon sweet soy sauce.
Add 1 teaspoon salt.
Add 3 cups jumbo shrimp. I purposeley leave the shell on the tail. You can remove the shell on the tail if you like.
Stir well.
Lastly, add the cooked spaghetti.
Mix well.
Turn off the stove and serve warm.

Shrimp Kue Teow and Hot Cherry Peppers
Fall is the time to stock up on fruits like apples or vegetables like winter squash and peppers. I went to the farmer's market and found this beautiful hot cherry peppers. It cost me just $7 for a big box. I use plastic gloves to handle these peppers otherwise my hands will be "pijar" as said in bahasa melayu or in english means burns from hot peppers. I can get a buck for a bag of 50 disposable plastic hand gloves t dollar store.
Above is a blended hot cherry peppers cooked in olive oil, onion, garlic, shrimp paste(belacan) and ginger. The cherry peppers are cleaned and seeded. I don't think I can stand the super heat taste from these peppers. What I like about this pepper is that it will give volume to my cooking. I do not need to add tomato as tomato will set different taste to the dish. I pack the rest of the cherry peppers, whole, in a gallon size zip lock plastic bag. They can last throughout winter.
One of the dishes I use this cherry peppers mixture is in the fried kue teow. One of my good friend invited me to her house today. We cooked fried shrimp kue teow. Her kuali is huge and super heavy. And it cooked the kue teow well.
This hot cherry pepper is the secret to my cooking. There are other peppers I like such as the cili padi (bird eye chili) mix with poblano peppers. They both give the same heat and flavor to the dish.
Buttercup Squash is sold at a good deal too. They gave me 20 buttercup squashes for $10. I cannot get that price at the store.
My style to enjoy this squash is simple. I just bake them in the oven at 420 degree F for about 40 minutes. I can add brown sugar to the meal or add salt and pepper for savory flavor.
While shopping at the asian store for the kuchai and taugeh to go with the fried kue teow, I found this kedondong as in bahasa melayu or Spondias dulcis or Ambarella in english. This kedondong is fresh and delicious.
