Thanksgiving and Black Friday


Mrinate the turkey with butter first.
Then sprinkle a thin layer of cajun spice on the outside.
It was raining on the morning of Thanksgiving Day in my neighborhood. Honey doesn't want to let down his family, so he went out to the store and bought a big tent. I am sitting here waiting fo the peanut oil temperature to reach 320 degree F.

The oil is ready for the turkey.

Finally the turkey is in. Every 1 lb of the turkey, we need about 3 minutes frying time.

Our dessert is a cheese cake. This is a truffles cheesecake from SAM's. Delicious.
The next day, I was not able to go for a black friday shopping. Luckily all the items I needed are available online. I am not sure if the tom yam I had 2 days ago is causing my heart burn. I drank glasses of home remedy, a ginger tea but it didn't help. I feel better today after taking dr. prescribed med.

Cheesecake

Honey has been asking for some cheesecake for quite a while. I know I have a huge blog of cream cheese in the fridge but I just don't have the mood to cook it. Honey thought I could just whip it up and no baking involved. But it is not the case here. There are cheesecakes that require no baking and I will need to use gelatin. Gelatin is not what I have in my pantry today.

This cheesecake is called for 325 degree F in the oven for 45- 50 minutes.

Ingredients:

24 oz Philadelphia cream cheese
4 eggs
1 tablespoon vanilla extract
2 tablespoons unsalted butter
1 1/2 cups sugar
1 ready to use graham cracker crust.
Method:
Bring everything at room temperature.
With electric mixer, beat cream cheese with sugar.
Add butter and beat smooth.
Add 1 egg at a time and beat.
Add vanilla extract and beat smooth.
Preheat the oven to 350 degree F.
Pour batter into the graham cracker crust.
Lay the cheesecake on a tray fill with water.
Bake in the oven at 350 degree F for 40 minutes.
Lower the temperature to 300 and bake for another 10 minutes.
Remove from the oven and cool it at room tempearture before cooling it further in the fridge for 4 hours before serving.

This cheesecake is very smooth and velvety soft. There is no cracks on the surface.
Honey is happy that he finally gets his cheesecake for dessert.

Cheesecake (Ricotta Cheese)

A little twist on this cheesecake. I am using ricotta cheese instead of cream cheese. The taste is really great. It is baked in the oven and so the cheesecake texture is a little bit firmer with some flour mix to it.

Ingredients:
15 oz ricotta cheese
3 eggs
1/4 cup sugar
1/3 cup milk
1/4 cup all purpose flour
1 tablespoon vanilla extract
pinch salt



Whisk ricotta cheese in a bowl with 3 eggs. Then add sugar, vanilla and milk. Mix well.

I used ready made graham cracker pie shell.
Decorate with strawberry syrup.
Bake in the oven at 325 F for about 40 minutes or until cooked.

Cheesecake (Plain)

This is my first cheesecake ever made. I follow the recipe from the package of the cream cheese. They are good enough to to my taste. I drizzled some strawberry jem at the top as decoration. But I didn't make a good swirl with it.
