Chicken with roasted carrots
There are times when you prepare a meal for dinner, you just wanted to cook it quicker and at the same time mantain the flavor and keep it on the healthier side.
Today's meal was a simple roasted carrots, with some white rice and a piece of chicken breast.
How to cook the white rice.
use a cup of rice, wash and drain the water 2 times. No detergent needed for this. Just use cold tap water.
For a cup of rice, you will need 2 cups of water. Cook tge rice in a pan on medium low heat. Stir occasionally until all the water has been absorb by the rice. Tutn the heat off and cover the pot
Next is to roast the carrot. Take one long carrot, clean the skin off and cut both ends off. Slice the carrot at an angle. Sprinkle some salt and ground black pepper. Drizzle some olive oil. Mix well. Bake in the oven at 400 degree F for 20 minutes.
Clean, wash and pat dry the chicken breast. Sprinkle some salt and ground black pepper. I like to sprinkle tiny bits if ground turmeric. It will give a kick to the flavor. In a pan, heated some olive oil on medium high heat. Fry each side of tge chicken breadt for at least 5 minutes.
Last but not least is to cook beef gravy or any gravy you like. Boil a cup of water to a 3 tablespoons of powdered beef gravy. Stir it until it thickened.
Garnish the meal with chopped green onion.

A delicious meal tonight from Ramadan buffet at a restaurant. I ate too much that I regret it. I have not been eating so much like this before. But it was all worth it because I have the family around me.

My meal tonight was a bowl of chicken soup. I always cook the soup the same way my late mother taught me. I used lots of grated ginger, onion, garlic, and mrs. dash original blend. I also added some diced potato. It was delicious.

Ramadan day 19
I cannot believe time just fly. Tem more days left before Ramadan leaving us. Not much have I done during this fasting months. I was travelling back and forth from the house to the camp ground. Last night we packed the RV and keep it at the storage. It was raining hard earlier. We finally complete the work around 11 PM. I was too tired to sleep so I watched movie on my ipad. I have to get up early to sahur and get ready for work. So, today's dinner was fried chicken with mashed potato and coleslaw from kfc. The meal came with 4 bicuits. They are so tasty.

Ramadan 2015 Day 27 - Hot and Spicy Chicken
Breaking fast is not complete without hot and spicy chicken. This is a simple recipe. I am using 4 pieces of chicken thighs.
Cut into 6 pieces 2 potatoes.
Slice some carrots.
Chop some cilantro and parsley.
Chop 1 bell pepper.
Chop 1 onion.
Dice a few cloves of garlic.
1 cup of blended hot peppers.
Salt to taste.
In a big pot, heat 2 tablespoons of olive oil.
Fry onion, garlic and bell pepper.
Add hot pepper and fry until pepper is cooked.
Add chicken. Cover.
Once chicken is cooked, add salt to taste and then add potato. Cover.
Lastly, add chopped cilantro and parsley. Mix well.
Turn off the stove.
Serve warm with white rice or cube rice.
Share

Ramadan 2015 Day 24 - Break Fasting Party part 4
It was a nice break fasting dinner at a friend's house. I ate too much that I had to stop or else I would not be able to drive home. Everyone are happy and enjoyed the meal. We start the course with some appetizers followed with rice and all kind of side dishes. It was a potluck dinner where everyone brought their own dish and share it at the party.
One of my favorite appetizer is the spring rolls. The filling of this spring roll is a mixture of eggs and vegetables. Someone brought quesadilla. I am not sure what is the filling. It might be egg and cheese.
The hostess prepared the fried noddle. It was really tasty. My blood sugar probably went up to the roof after eating this meal. But it was really delicious.
More main dishes are served. There are biryani rice, pineapple and cucumber salad, fish, bergedil, rice stick noodles, etc.
We had watermelon and cocktail fruits for the drink.
One lady brought this delicious tiramisu. I really had a good time enjoying the food and the company.

Ramadan 2015 Day 20 - Coriander Fried Chicken and Tomato Rice
I craved for mom's home cooked meal. This was a simple meal... fried chicken marinated in onion, coriander, ginger, cumin, salt and corn starch.
The chicken was cooked with some oil and on medium heat until cooked through.
For the side, I cooked tomato rice. I used a can of tomato soup and add some basil and parsley to the rice.

Ramadan 2015 Day 18 - Break Fasting Party part 3
Another blessed day today for having to break the fasting at relative's house. There are lots of food to eat and lots of dessert and drinks to enjoy.
Fried Chicken.
The company was nice. No complain on the weather. It has been nice, breezy and cool all day long. I could turned off the air conditioner at home all day.

Peanut Reese's Chocolate cake. Delicious.
Early in the morning I was working in the garden. There are lots of peas, beans and lettuce to pick. I had a great time harvesting them since the weather was very nice.

Ramadan 2015 Day 12 - Chicken in Soy Sauce
It was cooler in the morning and I had to put on a light jacket. Unfortunately, by noon the temperature went up to the 80s with nice breeze.
I didn't get the chance to stop by in the garden. But I still have lots of string beans.
For tonight's dinner I cooked string beans with the chicken marinated in dark soy sauce.
The recipe for this soy sauce chicken came from my late mother. She used the same recipe for fish, or beef. This dish is super delicious to be eaten with warm rice.
Ingredients:
5 pieces chicken wings
1/2 cup of sweet soy sauce
1 tablespoon of dark soy sauce
1 stick cinnamon
1 piece star anise
2 pieces whole cloves
1/2 cup water
1 tablespoon of blended red chili
1 large onion (dice)
1 tablespoon of chopped garlic
1 cup of baby carrot
2 cups of cut string beans
1 teaspoon of grated ginger
1 tablespoon of olive oil
Method:
In a big pot, heat olive oil. Fry blended chili, onion, garlic, cinnamon, star anise, cloves, ginger until fragrant and onion translucent.
Add chicken and fry until chicken is half cooked.
Add the sweet soy sauce, dark soy sauce and water.
Cook for about 10 minutes on medium low heat.
Add carrot and string beans.
Let it cook further for 2 minutes.
Turn off the stove.
Serve with warm rice.

Ramadan 2015 Day 6 - Hot and Spicy Chicken
Another rainy day today. It is good for the vegetable patch but not so good to be on the road. I have to drive slowly due to limited visibility. Since the weather was a little bit cooler, I decided to heat the kitchen and cook a spicy chicken or in bahasa it is called Ayam masak Sambal.
I have been craving to eat this spicy chicken for quite sometimes. It was easy to cook and the taste was marvelous.
Ingredients:
4 pieces chicken thighs
1 large onion
2 tablespoons of blended hot peppers
1 tablespoon of grated ginger
2 tablespoons of olive oil
1/2 teaspoon of salt
1/2 teaspoon of shrimp paste
1 tablespoon of sugar
Some carrots for garnish
Method:
In a big pot, heat olive oil on medium. Fry the blended hot peppers, ginger, shrimp paste and the chopped onion.
Add in the chicken thighs that has been cut into 3 parts each.
Cover. Let the chicken cook for about 20 minutes. Making sure the part with the bone is cooked thoroughly.
Add carrots, salt and sugar.
Cook for another 5 to 10 minutes.
Cover and let the chicken bubbly until the oil comes to the surface.
Turn off the stove and serve with some white rice. Delicious!

Syawal 2013 Day 1 - Soy Sauce Chicken
Ramadan is over. Today is the day to feast on good food. After attending the eidul fitri prayer at the mosque, I went home to feast on my home cooked meal.
This home cooked soy sauce chicken is super easy to cook. I am using all dried spices such as parsley, onion, garlic, ginger,hot peppers, cloves and cinnamon. Simmer them with 1 tablespoon olive oil and 1 cup of water. Then add dark soy sauce and sweet soy sauce. Simmer on medium low until chicken is cooked. I am using chicken wings.
I serve this yummy soy sauce chicken with spicy rice and the sambal goreng. Bon Appetite...

A simple and easy meal tonight. Chicken curry cooked with some shredded carrots and pineapple.

Ramadan 2013 Day 19 - Chicken Spring Roll
I care for some fried food. So, I decided to fry a chicken spring roll. This is super easy food to prepare. Firstly, I cook the filling. I fry without oil sliced red onion, chopped garlic, 3 pieces mint leaves(chopped), chicken breast cut into small pieces, bean sprout and chopped cauliflower. I used hot salt and ground black pepper as seasoning. Let the filling cool and toss the excess water.
Deep fry until golden brown. This spring roll is crispy and delicious!
