Spaghetti and Shrimp in Wonton Wrap

I received Valentine's package from Honey today. Inside the box was a teddy bear, a bouquet of red roses with clear glass vase, a box of chocolate and a bath set. I love roses. They are beautiful and can lit up any room.
I am going to give honey a big musical card and a teddy bear. We both seems to be collecting teddy bears all these years.
So, for dinner tonight, I cooked spaghetti and shrimp in wonton wrap. It was a simple dinner but definitely was taking time to prep.
The first thing I did was to boil 7 cups water in a big pot.
Then I boil half a box of thin wheat spaghetti.
As Julia Child used to say, do not add oil in the spaghetti. It will not soak up the flavor from the spaghetti sauce.

Agar-agar Santan

Nothing is more refreshening and soothing than agar-agar (jelly) in the hot summer day.
This is a simple agar-agar.
Ingredients:
1 packet of agar-agar ( you can buy it from the asian store)
1 cup of brown sugar
1/2 cup sugar
1 pandan leave (screwpine leave)
1 can of coconut milk ( I use Cocoa King brand)
Water
a pinch of salt.


Method:
Wash the agar-agar. My agar-agar has yellow coloring which I don't mind since I am mixing the agar-agar with brown sugar.
In a big pot, on high heat, add agar-agar and water until the water just cover the agar-agar. Add brown sugar, sugar, and pandan leave. Boil until all the agar-agar disolve. Lastly, add the coconut milk. Mix it well. Reduce the heat to medium. Before it bubble, turn off the heat. Use a fine strainer and pour the agar-agar into a square container 5 by 9 inches at least. Popped all the bubble at the surface. Let it cool on the counter. Then keep the agar-agar in the fridge before cutting.
The agar-agar in the picture above, I cut it using a metal serated knife designed as agar-agar cutter.

Agar-agar Kering Rainbow (Dried Rainbow jelly)




Ingredients:
1 packet of 50g agar-agar
1 packet of 400 grams rock sugar (gula batu)
1 cup powdered sugar
A dash of rose water
2 pandan leaves
8 cups water
Red, Green, and yellow food coloring

Method:
Soak agar-agar in water for few minutes. Toss dry. In a pot, boil agar-agar, water, powdered sugar, rock sugar and pandan leaves. Dash a bit of rose water. Strain agar-agar in 4 bawla and each bowl dash 4 drops of food coloring. The last bowl just leave it as it is. Let it cool at room temperature until it hardened. Using zig zag knife, cut the agar-agar(jelly) into 1 inch strip.

To make rainbow agar-agar, mix all the hard and cut agar-agar to heat in microwave at 350F degree for 10 minutes. Let it cool again. Then cut it into 1 inch strip. Let it caramelize. I am using the oven at "warm" temperature for about 20 minute. Let it air dry for several days.
