Ramadan day 29

A delicious meal tonight from Ramadan buffet at a restaurant. I ate too much that I regret it. I have not been eating so much like this before. But it was all worth it because I have the family around me.

Ramadan 2015 Day 10 - Rice Noodle in Beef Soup and Brownies

Lovely and beautiful day today. I decided to cook a simple meal for dinner. Rice noodle also known as bee hoon or mee siam is delicious and can be cooked in several ways. For today, I am making the rice noodle with beef soup.

For the soup:
1/2 lb of beef
1 stick of cinnamon
2 pieces star anise
5 pieces cloves
1 tablespoon of crushed coriander
1 big onion (diced)
1 tablespoon of chopped garlic
1 tablespoon of grated ginger
1 tablespoon of dried parsley
lots of water, about 10 cups
2 tablespoons of salt or as taste
Rice noodle. Soak in warm water.

Method:
Boil water and all of the ingredients.
Taste the soup and add salt if needed.
Let the beef cooked and all spices are marinated.
Add rice noodle and turn off the stove.
Garnish the rice noodle soup with hot peppers soak in soy sauce.

Dessert today was Brownies.
I am using brownie mix from the box. Follow the instruction on the box and add about 2 cups of apple sauce. I like to add some other ingredient into the cake mix. My favorite is to use apple sauce. The sauce will give more moisture to the cake mix.

The brownie came out nice and super moist.

Other ingredient that you can add to the cake mix is grated zucchini, peaches, or any other fruits and vegetables.

I cooked another simple meal for dinner today. I had string beans and steak.
Firstly, I sautéed one large sweet onion with butter, salt and some ground black pepper until translucent.
Then I stir fry the string beans with chopped garlic, butter, salt and ground black pepper.
Lastly, I pan fry the steak that I have seasoned with Montreal Steak mix spice.

For dessert, I had Gobs (looks like whoopie pie) cooked by my friend Susan.

Ramadan 2015 Day 2 - Stir fry Tofu and Beef

The body is trying to adjust to the new eating pattern. The morning breakfast must be done before the sunrise and dinner is after the sunset. No lunch or brunch or any snack. There will be no water in between.

The second day of fasting, I am keeping the same routine of having a toast with mocha chocolate almond flavor jam and a glass of milk.

Dinner was a simple meal, stir fry tofu and beef. I am using montreal steak spices, salt and ground black pepper to seasoning the dish.

For the drink, I liquefied an apple with pennywort. It was delicious.

Pepper Steak and Tortilla

Friday is a farmer's market day. Today's highlights are peaches, corn, peppers, eggplants and squashes. I have $15 to spent and ended up with 3/4 bushel of peaches($12), one buttercup squash($2) and 3 bell peppers($1). The weather is changing, soon from high temperature to breezy day. I am exhausted this week, not because of working so hard in the garden, but because of lacking in sleep. I have a lot of work to complete within a shorter time. Soon, it will be time to clean up the garden and to bring warmer season plants back into the house.
Tonight's dinner was very simple. For Mr. Big, I cooked steak (medium rare) and served with sauteed onion and green bell peppers. For myself, I had Pepper Steak with Tortilla.
Lightly toasted the tortilla wrap.
This pepper steak was infused with a hint of curry flavors. Yes, I like mixing the beef with some cloves, cumin, coriander, parsley, ginger, curry leaf and ground black pepper.
Saute the onion and green bell peppers with salt and ground black pepper. Set aside.
Using 2 tablespoons of olive oil, heat the steak that has been cut into bite size.
Add all the spices and mix well. Cook for about 5 minutes on medium high heat.
Turn off the stove.
Delicious!

Ramadan 2013 Day 18 - Steak and Potato

The rain was here. It was a heavy rain. I love the rain especially when I don't have to water the plants in the garden. Let the nature help me on that. I was stuck in the house and was busy sewing my raya dress. This time I am making the kebaya. Kebaya is a traditional malay dress that has a defined collar style. So, for my dinner tonight, I am having a simple meal, steak and potato.
I am using one red onion that I grow in my garden to cook with the potato. I lightly seasoned the potato and onion with salt, ground black pepper, and rosemary. The steak was rubbed with some montreal steak seasoning. These two dishes are my favorite dish. It took only 10 minutes to cook these meals.Delicious!

Ramadan 2013 Day 7 - Basmathi Rice and Beef Curry with Tempeh

Yet another hot hot day today. The temperature went up to 103 degree F again. I Had to go straight home after work. I don't have to heat the car engine further. The parking lot has no shade at all. Today break fasting meal was special. I am just in te mood for some extra spicy food. The first meal I cooked was beef curry with tempeh. Then I cooked basmathi rice with some chocolate mint. They are superb!
The rice was cooked in a cast iron pot. I love this pot. The rice came out soft and just delicious!
I do have to make sure that the flame was at the lowest. This pot gets very hot so quickly.
I sautee the onion, cloves, cinnamon stick, star anise, cardamon and chopped garlic in olive oil directly in this pot. Then I added rice and stir all the flavors. I also added some grated ginger and a tablespoon of turmeric powder. Add some salt for taste. Then I added water twice the measurement of the rice. Cover and simmer on low flame until cooked. Delicious!
