Rosemary Chicken

I have some chicken thighs in my fridge that I want to prepare for dinner. After browsing the internet for a while, I found a recipe on bake chicken with rosemary. I know honey will love this dish. I wish I had a fresh rosemary springs as this would taste better than to use the dried rosemary.
I must say that this recipe will make the chicken meat very tender. However, the taste is a little bit bland to me. Honey think otherwise. He loved it this way. I would suggest anyone who follow this recipe to add glaze like honey and rosemary to go with this chicken on serving.as for me, I had to use my favorite old sauce, the tomato and chilli sauce.
Ingredients:
1 cup orange juice
1/4 cup olive or vegetable oil
1 tablespoon chopped garlic
1 tablespoon dried rosemary, crushed
1 tablespoon dried thyme
a pinch of salt
8 pieces chicken thighs with bone.

Method:
Combine all ingredients in a large resealable plastic bag. Set aside half cup of the marinade.
Refrigerate the remaining marinade for basting.
Add chicken to the bag; seal to coat. Refrigerate for 4 hours or overnight.
Drain and discard marinade.
Bake the chicken in the oven at 450 degree F for about 30 minutes on each side or until meat juices run clear.
You could also grill the chicken, uncovered, over medium heat or broil.
Serve warm with rice.
Baste with reserved marinade.

  1. The skin looks yummy! I love rosemary chicken. I used to have this a lot when I was younger at my local cafe. It was rosemary and honey chicken! Simple yet so delicious!

  3. Zue,your dinner nampak lazatnya dgn mussel lagi! I never use herbs to cook with chicken,must try one day,Maybe when my oregano come back I can cook wt it!

  4. Beeachlover, yes, the chicken was tender and very tasty. Rosemary is my favorite herb. This spring I must grow it.

  8. Vg, how are you? Long time I didn't hear from you. Yes, roast lamb with rosemary must be delicious. My husband like to deep fry his lamb. Next time I will try rosemary on the lamb.

In US now, job is very tough to keep. Many people lost their jobs. Many talks on how to cope with losing job.

    inahar_ali, is Jamie Oliver the Brit guy in the cooking show? I remember this one one guy name Jamie at home show, or something like that and I like his show. He always cook simple meal. Looks like he just threw them in but I am pretty sure his meal is tastier than Rachel Ray. I also like his style getting his vege and herbs from his backyard garden. Very homey.
