Chicken Salad

Chicken salad is always my favorite meal for the day. But sometimes I try to limit the mayo in my diet. For this simple meal, I pan fry 1 chicken breast that I cut up into bite size. Firstly, rub the chicken with salt and turmeric powder. Then add black pepper, cumin and coriander. Pan fry on one side for about 3 minutes before turning to the other side. If you have a grill, it would be best to use it.
Let the chicken cool a bit before plate it on the salad that has already tossed with vinaigrette. I use blue cheese for my vegetables dressing.
The vegetables I am using here are just seedless cucumber, cauliflower and romaine lettuce. Serve this salad cold. You will get the protein and fiber from this meal.

  4. Zue, have you tried natural yoghurt as a dressing for salads? It goes extremely well especially with pasta salads :)

    Sha, that is a good idea to use yogurt in salad. No, I have never tried it but will give it a try. Thanks.
