Salsa Chicken
I grow some bell peppers, hot peppers, onion and tomato in the garden. For this recipe I am using all of the vegetables from my garden.
Ingredients:
4 pieces chicken thighs
1 cup of dry mix fish fry flour (seasoned)
1 medium sweet onion
1 large ripe tomato
3 bell peppers
4 hot peppers
1 tablespoon chopped garlic
2 tablespoons olive oil
1/2 teaspoon salt
1 tablespoon sugar
1 teaspoon capers
cooking oil to fry the chicken
Method:
Coat the chicken with seasoned dry mixture. Deep fry the chicken for 20 minutes or until the juice running clear. Set aside.
In a big pot, heat olive oil. Saute chopped onion, chopped bell peppers, chopped hot peppers.
Add garlic and capers. Stir and cook for 5 minutes.
Add diced tomato.
Add salt and sugar.
Let simmer for 20 minutes on medium low heat.
Serve with warm white rice. Enjoy!
