Every time working in the garden, I see lots of weeds. A friend told me that some of the weeds are edible. I never thought that weeds which always growing wildly in the garden are edible. The above picture is one of the weed that is said to be edible. This weed also known as amaranth grows abundantly in my garden.
The root of this weed is reddish in color. The plant is easily pull out from the ground. I could just stir fry this vegetable with salt and pepper. I am sure it could be cooked the same way you would serve your other green vegetables. The taste is a little bit bitter to me. But very interesting.
