Meatloaf


I craved for some meatloaf although meatloaf is not my number one must eat food. But once in a while I don't mind to indulge on this American food. I couldn't find my Cooking Joy recipe book so I googled and found Alton Brown meatloaf recipe. I don't have all the ingredients from his recipe. So I improvised. I must say that this recipe is too hot and spicy. If I have to do it all over again I will cut down on the spices.

Ingredients
6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
3 whole cloves garlic
1/2 lb ground beef
1 1/2 teaspoon salt
1 egg

For the glaze:
1/2 cup tomato ketchup
1 teaspoon ground cumin
Dash Worcestershire sauce
1 tablespoon sugar
Methods:
Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture.
Place this mixture into a large bowl.
Combine the onion, and garlic in the food processor.
Pulse until the mixture is finely chopped, but not pureed.
Combine the onion and garlic mixture and ground beef with the bread crumb mixture.
Add salt.
Add the egg and combine thoroughly.
Pack this mixture into a 10-inch loaf pan.
Combine the ketchup, cumin, Worcestershire sauce, and sugar.
Spread the glaze onto the meatloaf after it has been cooking for about 10 minutes.
Bake the meatloaf for 45 minutes.

While the meatloaf is cooking in the oven, I start peeling and dicing about 6 medium size potatoes.
Boil the potato until tender.
Drain the water.
Then add 2 tablespoons cream cheese, 1 tablespoon salted butter and 2 tablespoons milk to thin out.
Mash the potato and incorporate everything.
Serve the meatloaf with mashed potato and brown gravy. I used ready to use brown gravy.
