I have been eating porridge these past few days. As the day gets colder, this warm porridge is perfect to warm me up.
The basic ingredients:
1 cup long grain rice
5 cups water
1 teaspoon salt
1 small potato (dice small)
Today, I am putting some pickled radish. You can buy this pickled radish at the Asian grocery store. I wash the radish first to reduce the salt content. Then, I chop it into small bite size. I add this radish at the end of the cooking.
This porridge is considered as all day food. I can eat it for breakfast, lunch or dinner.
Cook everything in a big pot on medium low until the rice is soft.
