Twenty Seventh Day Ramadan - Spaghetti and Meatballs

The weather is getting cold. The temperature has dropped to the 70 and sometimes 60 degree F. I still have my lemongrass (serai) growing in the garden. I need to find time to dig it up as soon as possible before it get cold and die.
Today's breakfasting meal is a simple all wheat spaghetti and meatballs.

First thing to do is to soften the spaghetti. Cook the spaghetti in the boiling water with a pinch of salt and a tablespoon of cooking oil. Once soften, drain and set aside.

This delicious meatballs are loaded with fresh herbs like rosemary, sage, thyme and parsley.
I also added Mrs. Dash dry herbs, paprika and cumin.
1/2 teaspoon grated fresh ginger.
3 bunches scallions. Thinly chopped.
4 pieces of wheat bread.
1/3 cup milk.
1 lb ground beef.
1 egg.
A pinch of salt

Mix everything in a big bowl. Form small balls. Bake in the oven at 350 degree F for about 20 minutes.

In the meantime, start preparing the spaghetti sauce.
Into a big pot, heat on medium, I added 1 cup ready to use spaghetti sauce.
1 can of tomato sauce.
1 cup chicken stock.
2 tablespoon sugar.
A pinch salt.
1 tablespoon chopped parsley.
2 medium ripe fresh tomato.

Cook all the ingredients for about 10 minutes.
Then add the cooked meatballs.
Cook for another 10 minutes.
Before turning off the stove, add the cooked spaghetti.

Serve this warm and garnish with grated cheese.

    Lovely recipe! I shall give the meatballs recipe a try.

    When time permits, I make spaghetti sauce from scratch as well.

  2. Zue, the meatballs look good. Too bad Carlos is not a huge pasta fan that is why I hardly cook it.
