Snow Peas and Asparagus

This is my simple stir fry of the snow peas and asparagus. I was at Sam's Club yesterday and saw this beautiful bunch of asparagus spears for around $4.29. To know where the woody part end from the asparagus spear is by breaking it off at the bottom end. Then you can use the length that snip off and cut the rest of the spears following the length.

For this stir fry dish, I am only using about 16 asparagus. I wash and cut them into about 2 inches long. The rest of the asparagus I just kept it standing in shallow water.
Together with this simple stir fry vegetables, I am adding snow peas. I bought this snow peas for $0.79 per tray at WEIS market. I wash and remove the tough vein along the side of the snow peas.
Ingredients:
16 Asparagus
2 cups fresh snow peas
1 cup shredded carrot
1/2 big red onion
1 tablespoon ground black pepper
1/3 cup turkey slices for flavor
sea salt to taste
1 tablespoon soy sauce
2 tablespoon olive oil

Method:
In a big skillet, heat olive oil on medium heat. Saute diced red onion and turkey slices for about 3 minutes or until onion turn translucent. Then add shredded carrot. Stir and cook until carrot turn soft. Sprinkle ground black pepper and sea salt. Add asparagus, snow peas and soy sauce. Stir until asparagus cook to your liking. I like my asparagus to stay crunchy and not too soft. So, I turn off the stove after 2 minutes. This dish is delicious and can serve just like that or eat it with spicy beef. Stay tune for my next post on red curry beef that I serve with this stir fry vegetables. Enjoy!
