Romaine Letuce and Tomato Sandwich

I like sourdough sandwich. Usually I would not mind what type of sandwich I have. It could be fish sandwich, chicken sandwich or beef sandwich. For today's lunch I decided to make just a simple tomato and romaine lettuce sandwich.
For this, I need about 5 leaves of romaine hearts lettuce, 1 ripe Roma tomato and about 6 inches of hard crust sourdough bread. I cut the bread half lengthwise. Sliced up the tomato into 6 slices lengthwise. Then I roughly chopped the romaine lettuce.

Remove the middle meat of the bread. Drizzle it with a good amount of olive oil on the inside of the bread. Layer the lettuce and the tomato evenly. Sprinkle with good amount of salt and pepper. Layer with cheese. You can use any cheese you like.

Bring one bread with it's load to the top of the other. Press them down a bit and use a skewer to keep them stay together.
I toast this sandwich in the toaster oven for about 3 minutes or until cheese melt. Sometimes when I am a little splurge, I would have some crispy potato chips along the side.
Cut this sandwich into two so that it will be easier to eat. Enjoy!
