Pumpkin Muffins

This is my simple recipe for pumpkin muffins.
Dry Ingredients:
1 cup wheat flour
1 cup plain flour
1 tespoon baking powder
1 teaspoon cinnamon powder
1/2 teaspoon nutmeg
1 teaspoon all spice

Mix all dry ingredients in a bowl.
In another bowl mix all wet ingredients:
1 cup brown sugar
1 cup olive oil
2 eggs
1 teaspoon vanilla extract
1/2 cup milk
I use my cooked pumpkin as featured in here.

Meshed this cooked pumpkin. It comes to about 1 and half cup meshed pumpkin.

Mix the pumkin into the wet ingredients.
Mix the wet ingredients into the dry ingredients. Fold in nicely.
Line up paper cups into the muffins tray.
Heat oven to 350 degree F.
Pour in the batter into the muffin cup.

Bake in the oven on 350 degree F for about 20 minutes or until toothpick comes out clean.

This muffins is soft and delicious.

  1. At one glance I thought the huge chunk of pumpkin is cantaloupe. I tried baking with olive oil the other day but the cake turn out bad. It doesn't taste good at all. I never try it with muffin yet.

  2. Yeah. it did look like cantaloupe because of it's bright orange color. But no, it isn't. Actually, this pumpkin is so good as sweet pengat.

  4. Dhill, lepat or bingka labu sounds good. I can try that since I still have a container left of cooked pumpkin.
