Crepe

Lempeng or crepe is always my favorite meal for breakfast. In mt previous posting, I have featured my simple recipe for Lempeng(Malaysian pancake). For today's pancake/lempeng/crepe, I am using buttermilk instead of water. Here is the ingredients:
1 cup flour
1 cup buttermilk
1/2 cup water
1/2 teaspoon salt
1 tablespoon olive oil to heat.

In a bowl, mix flour with salt, buttermilk and water.
On the stove, heat olive oil in a non stick pan on medium heat. Pour half of the batter into the pan. Let it cook for about 2 minutes on one side, then flip the crepe once. Cook on the other side of the lempeng for another 2 minutes. Continue finish the batter.
Serve warm with a cup of hot coffee or tea.
This time, I serve this dish with some blackberries. You could use any preserve, dust of sugar or any dipping that you fancy. This dish is nice serve as sweet treat or with any spicy dipping sauce.

    klu kat teping (my hometown) kami panggil tempek. Makan dgn gulai(aka kari) or sambal tumis... lawan dgn kopi o..sure terangkat!
