Pajeri Nenas - Spicy Pineapple Salad

I love pineapple in any way it is cook or raw. For this dish all you need are:
1 fresh pineapple
1 tablespoon of cumin
1 tablespoon of coriander
1 tablespoon of turmeric powder
10 sweet peppers ( you can also use 2 fresh hot peppers)
1 inch ginger (grated)
1 medium size yellow onion
1 tablespoon of diced garlic
1 tablespoon of sugar
5 pieces cloves
1 cinnamon stick
2 pieces of star anise
3 pieces of cardamon
1/2 cup of olive oil
Salt to taste

The first step in preparing this dish is to remove the pineapple skin. Then cut it into 4 lengthwise. You can cut out the core. Then cut it into bite size. In a pot, boil water with some salt. Cook pineapple for about 10 minutes. Drain and put aside.
In a big skillet, heat olive oil or any cooking oil. Sautee onion, garlic and sweet pepper (seeded and cut it into strips), add ginger, cardamon, cinnamon stick, star anise. Stir until fragrant. Then add turmeric, cumin and coriander. Add back in the cooked pineapple. Coat them well. Seasoned with sugar and salt. Remove from the heat. Serve warm with briayani or spice rice.
