Keropok Lekor - Fish Snack

Sometimes I miss keropok lekor or fish snack. This fish snack is very popular in Malaysia. Here is my American version of the keropok lekor.
All I need is this bumble bee brand tuna
2/3 cup corn starch
1/3 cup flour
A pinch of salt
Olive oil to fry

Drain tuna. Then add corn starch. Mix well. Then add flour and a pinch of salt. Mix well. Use hand to combine and transfer it into a big zip loc bag.
Shape it into a log.
Remove it from the plastic bag and cut it at an angle using a sharp knife.
Take one piece and flatten it lengthwise. Deep fry this in hot oil until golden brown.
This mixture yields about 15 pieces of keropok lekor. Serve warm. Drizzle with sweet chilli sauce or sauce chili lingham. Yummy!

There is another longer version of keropok lekor that is to boil the mixture until it float.

This quick version is good enough for me. You can also shape this whatever way you like. Enjoy!

  5. Krystle, the tuna can size is 3 oz(85g) and it is tuna in water.

    The sweet potato Keropok is called kerepek ubi keledek?Spanish store sell this kerepek if you are lucky.
