Acar Timun dan Nenas (Pineapple and cucumber salad)

I bought one ripe, juicy and sweet pineapple from costco, a wholesale distributor yesterday. Other than eating the chilled cut pineapple by itself, I am craving for some pineapple and cucumber salad. This salad is spicy but refreshing.
1 cup of fresh pineapple (cut into bite size)
1/2 cup of cucumber (seeded and cut into bite size)
2 shallots (slice thinly)
3 tablespoons of white vinegar
1 tablespoon of sugar
A pinch of salt
1/2 teaspoon of sambal olek (can substitute this with crushed pepper flakes or fresh hot pepper)
Method: Mix all ingredients and chill it in the fridge for about 30 min until all ingredients absorb the juice and the flavor from the spices.
