Ramadan 2013 Day 22 - Banana Cake

I love banana cake. This recipe is slightly different than the recipe I had been using before. The cake came out moist and so delicious. This recipe is definitely a keeper. I would do this again.

2 1/2 cups of all purpose flour
1 2/3 cups of sugar
1 1/4 teaspoons of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
2 large eggs
2/3 cups of olive oil
2/3 cups of milk
4 ripe bananas
1 teaspoon of vanilla extract

Mash the banana in a big bowl. Then add sugar, milk and oil. Mix well.
Add vanilla extract and eggs. Combine.
Add salt, baking soda and baking powder.
Lastly, add flour. Mix well.
Preheat oven at 350 degree F.
Grease a 13 by 9 inch pan.
Pour batter into the pan.
Bake in the oven for 25 minutes or until a toothpick inserted comes out clean.

Heavenly moist and delicious!
