I am in the mood for something crunchy and infused with asian taste. So, I decided to fry the rempeyek with yellow split peas.
I am using ready to use rempeyek flour. I just need to add the following:
220 ml water
3 tablespoons powdered coconut milk
1/2 cup finely chopped kafir lime leaves
2 cups yellow split peas (soak for 2 hours)
Mix all ingredients in a big bowl.
Heat olive oil in a big wok.
Use a big spoon to spread the mixture along the side of the wok.
Fry until golden brown.
