Ramadan 28 - Part 4 Serunding Kelapa

Serunding kelapa is a savory coconut flakes cooked traditionally for special occasion or no occasion. This coconut flakes or serunding kelapa add delicious complement to any other dish. It can be eaten as a snack, use in the sandwich, side dish to pressed rice cubes, etc.
My sous chef, Amira was browning the coconut flakes.

The first step in preparing this delicious dish is to blend the following:
3 medium red onions
6 pieces fresh red hot peppers
1 cup dried shrimp
1/2 cup coriander
1/2 cup cumin
4 stalks lemongrass
1 cup water

Main ingredient: 1 lb shredded dried coconut.
1/2 cup sugar
2 tablespoons salt
2 tablespoons ground turmeric

Method:
In a big skillet, heat the blended ingredients above.
In a separate skillet, slightly brown the coconut flakes on low heat without oil.
Combine the coconut flakes into the savory blend.
Mix well and cook for 30 minutes on medium high heat.
