Fried Rice Noodle and Eggplant

I woke up this morning and crave for some fried bihun or also known rice vermicilli or fried rice noodle. You can buy the rice noodle at selected regular grocery store like Giant and Weis or at any asian store.

The first step in cooking fried bihun/rice sticks noodle is to soak it in room temperature water for at least 10 minutes.

Ingredients: Serve 2 people

1 layer of rice stick noodle
1 medium size eggplant. I am using the variegated color eggplant.
1 large yellow onion
1 tablespoon chopped garlic
1 tablespoon shrimp paste (belacan)
1 tablespoon soy sauce
1/2 cup blended hot pepper
1 cup shredded carrots
1 egg
3 tablespoon cooking oil
salt to taste
garnish with some flat leaves parsley.

Method:

Dice finely the onion.

Dice finely the eggplant. I leave the skin on.

In a big wok or pan, heat the cooking oil on medium high.

Add onion and eggplant. Let it sweat out and saute for 5 minutes.

Add carrot.

Add blended hot peppers.

Add garlic.

Add shrimp paste ( belacan). The aroma is very strong. You might want to open all windows in the house.

Add soy sauce.

Stir an egg. Let it all cook for another 5 minutes.

Salt to taste.

Drain the rice stick and add to the pan the soft rice stick noodle.

Mix well.

Sprinkle with some chopped flat leaves parsley.

Serve warm.
