Red Velvet Cake

This is as far as I can go with creativity to decorate a cake. I know, I seriously need to attend one of those cake decoration class. Maybe when the economy is a little bit better then I will consider joining those classes. In the meantime please bear with the sight of this cake.

I bake this delicious red velvet cake for the first time. I used red velvet cake mix from the box. I follow the instructions as written on the box. It was pretty easy to mix them up. I just need to add 3 eggs, 1/2 cup olive oil, and water to the cake mix.

I whipped my own cream cheese icing for the middle layer and to cover the whole cake. My cake decoration skill is not there. But I have tried my best.

The cake is baked for 35 minutes at 350 degree F.
This cake has two layers. I baked two separate 8 inch cakes. These two cake came from one box. As you can see from the picture above the cake separate itself slightly from the side. I like this cake for doing that. I don't even use any parchment paper.
I rub butter to the pan prior to dusting it with flour. Then I divide the batter into two and pour them into each pan.
I let the cake to cool down in the pan.
For the middle layer, I spread the cream cheese frosting with strawberry preserves.

Ingredients for cream cheese frosting:

1 1/2 sticks butter, bring to room temperature
8 oz of cream cheese (1 package), set it at room temperature
2 cups of powdered sugar
1 teaspoon of vanilla extract

Method
Mix butter and cream cheese together, about 3 minutes on medium speed until very smooth. Scrape down the sides and bottom of the bowl to ensure even mixing.
Then add vanilla extract and mix.
Slowly add the powdered sugar.
Use spatula to spread frosting evenly on the cake. I also use piping bag to decorate the cake.
This cake is very moist. I easily went for second despite had to watch my diet. After all it is for my birthday.

I was thinking of making this cake from scratch but then I said, I better not screw up the cake since it is my first time baking red velvet cake. The strawberry preserve mix with the cream cheese icing for the center was really good. The taste blended well with the red velvet cake.

  11. Farina, thanks. Red velvet cake just red colored cake with a hint of chocolate. I believe if you make this red velvet cake from scratch, you just need 2 tablespoons of cocoa powder and some red coloring.
