Fried Tapioca with Soy Sauce

I cannot get enough of fried tapioca. This time I am coating the tapioca with rice flour and regular flour and bind them together with some water.
Unlike in my previous posting of the fried tapioca, I fry the tapioca coated with dry spices and flour.
For this recipe, I try to keep the tapioca to stay crunchy.
Ingredients:
1/2 lbs tapioca (skin off, washed and thinly slices)
1/2 cup rice flour
1/2 cup regular flour
eyeball the water about 1/2 cup
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon salt

To make the hot and spicy soy sauce, I use my homemade sambal blend.

For sambal blend:

soak 15 to 20 dried red chilli in water for 30 minutes

5 cloves of garlic

1 inch ginger

1 stalk lemon grass

1 medium size onion

Cook this blend with 2 tablespoon olive oil or any cooking oil until the oil emerge to the top. Let it cool to room temperature before storing.

For this spicy soy sauce, I use 1 teaspoon of cooked sambal. I mix it with 3 tablespoon sweet soy sauce (kicap manis) and 2 tablespoon hot water. Add a pinch of salt and stir well.

This soy sauce is too hot that I need a glass of sweet and cold lemonade to wash it away.

  2. Dhil, I did listen to your comment, remember you said about cicah with sambal kicap. So I did this sambal kicap for you. Snow again this morning and super duper cold outside, so having this ubi goreng (fried tapioca) is really good.

  3. ye.. i ingat lagi. Kat sini klu nak mkn ubi goreng still kena buat sendiri.. tak pernah lagi jumpa kat gerai goreng pisang (which normally ada pisang, keladi, keledek, sukun.. tp tak de ubi kayu). Nampaknya weekend ni kena cari ubi kayu kat chow kit.. klu sempat le..ubi goreng & sambal kicap ;-)

  5. sedapnye Zue! .. kat kampung we all makan ubi kayu dengan kelapa parut & gula!! .. bestnye! .. never tried it this way before .. nanti I try to make .. terpaksa cari ubi kayu dulu tho'! .. :)

  6. i dunno why i tak pernah beli ubi kayu kat sini. maybe sbb they llok different and shiny. lol. But i must get some sbb lama tak makan ubi goreng.

  7. Farina, I prefer the frozen ubi kayu that has been peeled and cleaned. I had a bad experience once with the fresh one that waxed. Outside looked shiny and firm but inside already black.
