Shrimps with POM Wonderful Fresh pomegranates sauce

I love pomegranate or the popular name is POM. This recipe is inspired with my crave for shrimp and pomegranate. I decided to combine them together to join POM Wonderful Fresh pomegranates contest. The shrimps in this recipe have a nice ginger and spicy flavors and when combined with the sweet and juicy pomegranates and baked apple it creates scrumptious taste. This dish just make my dinner feels like heaven.


Ingredients for this recipe are:
9 large shrimps
1 Gala apple
3 wooden skewer
1/2 cup of pomegranate seeds (garnish)
1 inch fresh ginger root (grated)
1 tablespoon old bay seasoning
1/2 teaspoon paprika
cooking oil spray
4 tablespoon lemon juice

Ingredients for POM sauce:
1 cup pomegranate seeds
2 tablespoon corn syrup
a pinch of salt
1 cup water

Method to make promegranate sauce:
In a small pot, boil water and add pomegranate seeds. Once boiled, turn the heat on low and add corn syrup and tiny pinch of salt. Simmer for 10 minutes until reduced. Turn off the heat and let it aside to cool down.

Method for the shrimp and apple skewer:

Clean and devein the shrimps. In a bowl, add the shrimps with grated ginger, old bay seasoning and paprika. Rub well into the shrimp. I leave the shrimp's shell on. You can remove the shrimp's shell if you like. Set the shrimps aside.

Core out the gala apple. Then dice it about 1/2 inch bite size. I leave the apple's skin on. Then pour the lemon juice onto the diced apple. This will prevent the apple from turning brown.

Take the skewer. You can use bamboo, wood or metal skewer. Thread the apple first onto the skewers at its deepest part. Then thread in the shrimp. Keep alternate threading the apple and the shrimp until it fills the skewer. Finish this off with a piece of gala apple at the sharp end. Line the skewer on a rack. Spray with cooking oil on both sides.

Bake the shrimps on skewer at 400 degree F for about 20 minutes. Open the oven and turn the skewer onto the other side. Cook for another 20 minutes or until shrimps turn pinkish and cook through.

Serve the baked shrimps and apple on a plate. Drizzle this good heavenly smell shrimps dish with some POM sauce. Lastly, garnish this dish with lots of juicy and beautiful red delicious pomegranate seeds. Enjoy!

  2. woo! yalor..you banyak cepat la. today I just buy a fresh POm at 0.99..still scratching my head thinking what to cook with it..pasal 5k ni.kalo tak ada 5K ,maybe consolation prize pun jadila.
