Beef Rendang Pie - Spicy Beef Pie

On the Syawal day, Gertrude came to visit me at my house. She brought for me the mould to make lattice on pie crust. I was so excited to use the lattice mould. First thing I did was to thaw my Raya meal such as lemang(pressed glutinous rice), beef rendang and serunding kelapa (spicy coconut flakes) that I freeze all these while. I also thawed 3 pieces of frozen paratha or roti canai. You can buy this frozen and uncooked paratha at an Indian store or Viatnamese store. My favorite brand is Kawanku.
After everything had thawed in room temperature, I laid one piece of paratha in round tin foil plate. Then I layer it with the pressed glutinous rice. Next I sprinkle the spicy coconut. Then I put in the beef rendang. Lastly, I top this delicious raya left over pie with one piece of paratha. I try to stretch the paratha to cover the foil plate. Then I use the lattice mould on the last piece of the paratha.
I bake this pie at 350F for about 40 minutes or until paratha turn brown.
This pie is so delicious. Even honey finish half of this pie. I was surprise he likes the lemang. I guess when it is disguised under the beef rendang and the spicy coconut flakes, the lemang taste so much better to him.

  2. dhill, you are right. No food get wasted. But next time I am going to try different pie dough. The roti canai is good but the shape is too small.

  4. Zue, did you put two layer of roti canai on the top? Yeah, roti canai it kind of small for pie topping. You can always use store bought pastry.

  7. Farina, my place is easy to get. Even the Asian store now start to sell this dough. Back then I can only get it from Indian store.
