Potato Salad

5 medium size potato
4 hard boil egg
1/2 cup mayonnaise
1 medium size yellow onion
2 tablespoon sweet relish
salt and pepper to taste
Paprika as garnish

Peel the potato skin. Dice it into bite size. In a big pot, boil water. Once the water boiled, sprinkle some salt. Cook potato until soft. Strain and put aside. In separate skillet, blanch diced onion. Strain and add into potato. In another bowl, mesh hard boiled egg. Then in separate bowl, mix mayonnaise with sweet relish, salt and pepper to taste. If you have celery, you can add finely chopped celery and some celery seeds. Once the potato and onion are cold at room temperature, add all the ingredients and mix well. Sprinkle with paprika. Store in the fridge to chill.
I breakfasting with this delicious homemade potato salad with steak. Emmm...yummy!
