I bought some chicken thighs over the weekend and decided to cook this delicious chicken in dark soy sauce. In my kampung language we call this dish Ayam Masak Kicap.
First and foremost step in this process is to clean the fat off from the chicken, wash it and drain. Then sprinkle with enough salt on all sides of the chicken together with turmeric.
While the chicken is frying in the frying pot, prepare the ingredients; Garlic is missing from the picture. What you need are:
1 medium size onion. Cut half. One part you dice and another part just slice it.
1 stick cinnamon
2 star anise
3 pieces cardamon
5 cloves
2 inches ginger (Slice them)
1 tablespoon chopped garlic
1 tablespoon sambal olek (blended hot red chillies)
2 tablespoon Hoisin Dark Soy Sauce
1 tablespoon thin soy sauce
1 tablespoon sweet soy sauce
olive oil
salt to taste
In a big skillet, heat olive oil. Sautee diced onion , garlic, ginger, cardamon, start anise, cloves, cinnamon stick until brown and aromatic. Add sambal olek.
Then add fried chicken. Quickly coat the chicken with the spices. Add half cup water. Then add all the soy sauces. Finally, add the slices onion and salt to taste.
Serve this dish warm with white rice.
This looks delightful! I'd never get my husband to eat something he knew was deep-fried, but I'm wondering if I could maybe roast the chicken instead?
ReplyDeleteFearless kitchen, you can use roasted chicken but don't stir it too much in the soy sauce or the chicken will break. Actually you could pan fry your chicken with little oil if that is ok with your husband. As long as the chicken is cook first before you add it in the soy sauce then you will be fine. You don't want to cook the soy sauce too long or it will be bitter.I hope my response answered to your question.

Beachlover, yes, you can add cili padi to give it a boost. That sambal olek is already hot for me.
ReplyDeleteNing, this recipe for ayam Kicap has been with me since I was small. I see my mom (may she rest in peace) use these spices everytime she cook her chicken in soy sauce. I could try with bay leave the next time I cook this. Thanks for your idea.

ReplyDeletethanks for the recipe. I tried it today it turn out very good. What i did differently is fried and set aside about 1/4 cup of cashew nuts and use the remaining oil to stir fry the ingredient and then sprinkle the fried cashew over the dish when serve.
