Kuih Gunting (Spicy Crunch)


I love kuih gunting. Rather than rolling the dough with a rolling pin, I find this pasta maker handy.

The dough is simple to make.
All I need was:
1 cup flour
1/2 cup rice flour
1/2 teaspoon salt.
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon curry powder
For added heat, 1/2 teaspoon red chilli powder.
1 egg
1 tablespoon water.

Method:
Mix all ingredients in a bowl began with the dry ingredients first. Blend it well with flour and rice flour. Then add egg. Mix well. Add water and knead the dough. Sprinkle some flour on the dough so that it will not stick to the pasta maker.
I use scissor to cut the strip into 2 inches length.

Becareful not to splatter hot cooking oil on your hand when you fry them.

  1. Zue, bila you buat kuih gunting? All this while I thought you need to put some butter or margarine to the dough. Is so easy when you can roll the dough with a pasta machine :) :)

  3. Gert, the recipe for pasta came with the machine. I have tried it one day and it asked for were flour, egg and little water. Ever since that I customize it with my asian taste. Cumin and coriander, really make it taste like maruku. Of course like you said, need rice flour to give that crunch.
    I fried this kuih gunting yesterday afternoon after came back from work. It didn't take long to make but surely make my kitchen chaotic.

    Farina, Now you have my recipe. Try it and let me know how it turn out. I remember the first time I wanted kuih maruku. It cost me like $4 for a small packet from the Indian store. Since that, whenever I have the time, I learn and try to cook it myself.Speaking of maruku, I have another version that use just rice flour and the batter is softer so that it will come out easily from the nozzle.
