zucchini omelet
















This morning I saw the big zucchini that Gertrude had left behind for me. Sue, my neighbor gardener gave us this zucchini. I was planning to make zucchini pancake but I forgot to add flour. So it became zucchini omelet. They are very good. I skinned off the zucchini and grated it. I added spices and dry herbs, 2 eggs and mixed the batter well. I use butter to oil the skillet. I serve this omelet with my roasted beets. For that big zucchini, I made about 7 pieces of omelete.

  2. Zue, the next time you make this again try to remove some of the zucchini juice. This way your pancake won't be too soft. As you know zucchini has a lot of water.

  3. Gert, thanks for your tips. I will squeeze the juice out the next time. Maybe I will make the pancake tomorrow and also make cekodok.
