Tomato Rice

It feels like in spring today. The temperature was around 70 degree F. Very breezy and the house is not as hot as an oven. I spent 2 hours earlier at the garden. Watering the thirsty plants. One zucchini turned orange instead of green because lack of water.

Since the weather is very beautiful, I decided to cook a special meal for our dinner. I like tomato rice and it has been a long time since I ate rice. This tomato rice is very simple to cook.

Ingredients:
2 cups basmathi rice
1 small can campbell low sodium tomato soup
3 star anise
5 cloves
1 cinnamon stick
2 cardamon
1/2 teaspoon powdered ginger
1 1/2 cup water
1 medium yellow onion
3 cloves garlic
3 tablespoon olive oil
Homegrown flat leave parsley and homegrown green onion as garnish


Method:
In a big pot heat olive oil on medium heat.
Saute diced onion and chopped garlic.
Add star anise, cloves, cardamon and cinnamon stick.
Add powdered ginger. Cook until fragrant.
Add tomato soup.
Cook for another 5 minutes.
Add basmathi rice and water.
Simmer on low cover until rice is cooked.
For the side meal, I fry whiting fish.
I also deep fry the rape salad.
Garnish with chopped spring onion and flat leave parsley
Serve warm.

    nasi tomato is also 1 of my favourite, tp jarang ada jual kat kedai except pasar mlm (which i hardly dpt peluang nak pegi).. so selalunya mkn time kenduri kahwin je especially kat sebelah utara.

  3. Dhill, I saw some recipe for tomato called for orange sunkist, milk, etc. But this recipe is very simple and the taste was very good.
