Pineapple cookies - Tat Nenas -> Part 1

The first step in making delicious tat nenas is the filling that is pineapple jem. Over the years I have tried making the pineapple jem either from fresh pineapple or from pineapple in a can, the crushed kind. I find it fresh pineapple taste much more better than the pineapple in a can.
So here is my step by step before I make my Tat Nenas.

Pick almost ripe or ripe pineapple. Skin off. Then cut it into 4 lengthwise. This way it will be easier for you to handle the pineapple.
I use this old grater and start grating 2 pineapples.
Drain the excessive juice from the 2 grated pineapples.

On medium heat cook this pineapple. Here I have added 2 cups sugar, 1 tablespoon vanilla extract, 1 teaspoon nutmeg, 1 tablespoon grounded cinnamon, 1 teaspoon grounded cloves and 3 drops of red coloring.
Cook this until the water reduce and pineapple cook.

Here is the end product. Let this pineapple jem cool and store in the fridge until the next time when I am ready to make my Tat Nenas.
