Eggplant Curry Noodle

Beachlover gave me a packet of instant curry paste when she visited me 2 weeks ago. I used 1/3 of the paste for my eggplant curry noodle.


Ingredients:

1 packet of yellow noodle

1 medium eggplant (skinned off and dice)

About 3 tablespoon instant curry paste

salt and sugar to taste
2 tablespoon oil to fry eggplant
Method:
Sautee eggplant on medium heat. Once eggplant is cooked, add curry paste. Then add noodle and 1 cup water. Let the noodle soft and cook. Seasoned with salt and sugar to taste.
The curry paste is so delicious. You may garnish this dish with boiled egg, cucumber or fried tofu.
