Cucumber salad

I am blessed with lots of cucumber from my garden that I have to eat it everyday. My simple solution is to make cucumber salad. Instead of using vinegar and sugar, I am using ready made vidalia onion salad dressing. I bought this salad dressing from Costco. The onion and the green pepper came from my garden. The small red onion is so strong that I love it so much and will make sure I grow them again next summer.

  2. I love cucumber salad. Robert, on the other hand, likes to eat it raw with some salt. Oh yes, I remember my mom used to cook cucumber with prawn - taste good too.

  3. beachlover, over the years I have killed so many plants. But this year the good insects must be around to polinate my cucumber. Last year, I only got 1 cucumber.
Cath, I never cook my cucumber before. I must try your mom's recipe. What spices should I use?

  4. Kak Zue,
She just sauteed the garlic, add the shrimps, fried till it turned orange, then add the 1/4 cm sliced cucumber. Salt and pepper to taste and add some water, cook for 5 minutes till the cucumber a little soft.

If you like it a little spicy, add some cut chillies.

    That's my mom's recepi lah...
