Shrimp Tofu




I came back from shopping and in a hurry cooked this delicious tofu and shrimp in coconut gravy.




4 squares firm tofu -diced
1 cup shrimp
1 medium yellow onion -chopped
2 garlic - chopped
2 fresh green peppers
1 cup string beans
1/2 cup snap peas
1 cup coconut milk
1 table spoon grill spices
1/2 tablespoon curry powder
1 stalk lemongrass
salt to taste
1/2 cup chopped fresh Basil leaves

In a pot, sautee onion, peppers and garlic with little olive oil. Then add string beans, peas, tofu. Cook for 2 minutes. Then add coconut milk and the rest of the spices. Add salt to taste. Add shrimp and cook until boil. Turn off the heat and serve with white rice. You can dress it with some spicy sambal.
