Peria (Bitter gourd)
I have no idea why I suddenly wanted to cook this bitter vegetable. This is what I did to this dish.
1 bitter gourd (peria)
1 cup grated sweetened coconut flakes
1 tablespoon curry powder
A dash of salt
1 tablespoon apple cider vinegar
Cut half the bitter gourd lengthwise. Using spoon, seeded. Slice thinly. Boil water in a pot. Blanch the bitter gourd for about 10 minutes. Drain and toss. In a skillet, pour in the grated coconut. Add curry powder. Cook for about 5 minutes on medium heat. Add apple cider vinegar and salt to seasoned. Pour in the bitter gourd and mix well. Cook for about 10 more minutes. Serve hot over rice.
