Fried Brinjal(Eggplant/Terung)



You must give this fried brinjal a try. It is delicious!!! For those mom who cannot make the children to eat brinjal (terung), this is one way you can hide the vegetables and add crunchiness to it.

Method:
Peel off the purple skin. Cut it diagonal in about 1/3 inch. In a bowl, beat 1 egg. In another bowl, use 1/2 cup of flour. Mix in salt and pepper in the flour. You can also add any dried herb you like. Coat each slices in egg and then pat it in the flour and fry it in hot skillet. You need just about 1/8 inch of oil. It take second to brown and flip it to brown the other side. Serve it hot. It is crunchy and yummyy!!
