Ramadan 5 - Sweet and Sour Fish

Today I almost couldn't make it fasting the whole day. I feel so weak and hungry. The worst thing is I feel super sleepy. Thanks to the pancake I had for breakfast. We had enough already having scrambled eggs for breakfast. I didn't have oatmeal or grits in the kitchen. I must have thrown them in the trash for being too old in the cabinet.
Dinner tonight is a simple sweet and sour fish for me and just fried fish for Mupi.
Ingredients:
1 croaker
1 large yellow onion
1 cup sambal blend(hot peppers, onion, garlic, ginger, lemongrass, shrimp paste)
2 tablespoons sugar
2 ripe tomatoes
1/2 cup chopped curly parsley
1 green chili for garnish
2 tablespoon olive oil
1 cup water
1 cube anchovies bullion(salty, so omit salt)
olive oil to fry the fish

Method:
Prepare the sweet and sour first.
In a big pot, heat olive oil.
add in the sambal. Fry for 2 minutes.
Add anchovies cube.
Add diced tomato.
Cut onion into rings and add into the sambal.
Fry for about 5 minutes.
Add water.
Add sugar.
Let it bubling.
Add parsley.
Cook until thickened.Set aside.

Next is to prepare the fish. Make 2 small cut on the meat up to the bone on each side.
I am using zatarin fish fry to coat the fish.
Fry the fish in deep oil until brown.
Put the fish in a serving dish.
Pour the sweet and sour sauce on the fish.
Garnish with green pepper.
Serve warm with white rice.
