Ramadan 3 - Chicken Soup and Sandwich Crackers

Third day Ramadan went by smoothly. The temperature outside was at a lower degree, cloudy and very comfortable. I was busy sewing my baju raya that I didn’t see the time flies. I was in the mood for some soup. So, I decided to cook chicken soup, my late mother’s style. That is using the 4 herbs, cardamom, cinnamon stick, star anise and cloves.
Ingredients for the chicken soup:
4 pieces chicken thigh
2 medium potatoes
2 shallots
1 tablespoon chopped garlic
1 inch fresh ginger
2 star anise
5 cloves
1 piece cinnamon stick
2 cardamoms
2 tablespoon olive oil
5 cups water
Salt to taste
Curly parsley as garnish

Method:
Use scissor to cut the meat from the bone.
Dice the potato into bite size.
In a big pot heat olive oil on medium high.
Fry onion, garlic, ginger, star anise, cloves, cardamon and cinnamon stick until fragrant.
Add chicken bone. Stir for 2 minutes.
Add the rest of the chicken meat.
Add water.
Let it boil.
Add potato and simmer.
Add salt to taste, about 1 tablespoon.

Serve warm with baguette, noodle, rice, or crackers.
I also broil the crackers sandwich in with the slow roasted tomato and mozzarella cheese. It was a special order from Mupi. He called it o'dourves but I already sandwich the cheese and the roasted tomatoes. By the way, my breakfast this morning was scramble egg and bread. It was perfect. I was not hungry the whole day.

I have a big bowl of ripe tomatoes. I am thinking of making tomato soup for tomorrow. Stay tuned.

  1. Yati, thank god he likes tomato although it must be cooked to his order. Otherwise, I will fill up the freezer faster with the tomatoes.
