A very light meal today. I cooked bean sprouts with spring onion. Super easy meal. All you need is 3 eggs, a tray of bean sprouts, and 2 spring onions aka scallions. Salt and pepper to taste.
Wash the bean sprouts. Toss.
Whisk eggs together until just well blended.
Chop scallion small.
Cook in a non stick skillet until egg is cooked and bean sprouts slightly wilted.
