Ninth Day Ramadan - Lamb Chop, Mashed Potato and Banana Split

I had my dinner a bit late tonight. We went out to the grocery store to get light bulb, and ice cream toppings for our banana split.
I already cooked the potato for the mashed potato before I leave the house. The potato is sitting in hot water and a bay leaf.
This time I am following mashed potato recipe from the Food Network by Tyler Florence except I am using regular 2% milk than the heavy cream as in his recipe.
I peeled and diced the potato into small shape. I am using 5 medium size red potato.
Boil the potato in water that has been salted and add 1 dried bay leaf.
Cook potato until tender.
In the mean time, I start to prep the lamb.
I drizzle a pinch of salt, ground black pepper in a cup of 2% milk.
Soak the lamb in the milk.
Chopped finely thyme and rosemary. It is about 1 tablespoon of the chopped herbs.
Add into the lamb and the milk.
Let it marinate for 1 hour in the fridge.
I use the zatarain's fry crumbs for this dish because that is the only crumbs my honey will eat.
I will poke into the meat after 10 minutes in the hot oil to see if it is thoroughly cooked. If there is no blood running out of the meat, then it is cooked. If blood is there, I will let it cook for another 5 minutes before I check it again.

Back to the mashed potato, I drain the potato and throw away the bay leaf.
In a small pot, I heat 1 cup of 2% milk.
I add 1 stick of salted butter.
I turn off the stove as soon as the milk start to boil.
Using a masher, I started to mash the potato. Then I add 1/2 of the milk and butter mixture.
Sprinkle some salt and ground black pepper. Then add the rest of the butter and milk.
I garnish this potato with finely chopped chives.
Delicious!

Honey ate the rest of my lamb chops. I don't know why but I could only eat 2 pieces of those petite and delicious lamb chops.
Maybe my tummy knows that she will be getting this huge banana split. I am using butter pecan ice cream and topped it with walnut, strawberries, banana and hot fudge.
I like to make my own fresh strawberry mix with sugar and let it marinated in the fridge. The longer they are together in the fridge, the sweeter they taste. But don't keep them more than a week. They may start to form mold.

Oh! By the way, I try to cook kuih siput (shell shape fried cracker). Unfortunately, it did not turn out good. It was too salty for me. That is the problem when I try to cook a dish without being able to taste the food. The picture of the kuih siput is as the one on top of my mashed potato as a garnish. I will try to make it again tmorrow and tell you about my experience making the kuih siput.

I am also half way done sewing my baju raya. You will see the picture once I've finished. It is red and black, a strong color combination with lots of glitters.

Till then, have a nice day!
